We have established a system for measuring and separating, introducing and reinforcing new behaviors, as well as reviewing progress, and planning for the future. In this way, we work from prevention and reduction. We make the most of all the food (salvaging, innovating, transforming, animal feeding), then composting, conversion to useful energy, and finally, the least desirable thing which is to dispose of the waste.
We invite our visitors to be aware and conscious of reducing food waste at the table.
